                           Sith are about power and there's no better way to encourage it than dangling it in front of your apprentice and making them aspire to become as strong as possible by learning everything they can from u so they can one day attempt to kill you (which would be there ultimate test, to see if they're worthy of taking on the mantle). It's all about preservation, a Sith wants their order to continue on forever and the only way that can occur is by having the absolute best of the best carrying out their legacy as master and apprentice. 

I don't think any Sith wants to die [ Palps is a bit of an exception] but if it means their order will live on through a new [probably more powerful than last] master then it's a necessary death to them. That's not to suggest if an apprentice tries to pull a fast one on their master the master will bow out humbly or not try, as they will fight for their life because it's the ultimate test: either the apprentice wins and the Sith order has a new, stronger master to lead it or the apprentice ultimately did not have what it took and the master will have to find a more worthy candidate....
